Elfen Lied and Neon Genesis Evangelion were two of my favorites, and not just for the boobs and cool actions scenes. I loved the in depth (as well as sad) stores behind them.
On the lighter side I also loved Lucky Star, Azumanga Diaoh (hilarious), Melancholy, Cowboy Bebop, Abenobashi, as well as may others. Currently I'm watching Tengen Toppa Gurren Lagann- made by the same people as NGE and FLCL. Some episodes are hilarious and badass at the same time.
I never really got into long drawn- out animes like Naruto or Bleach, mainly for the fact that it would take too much attention span to get through the entire series. I used to watch DBZ a long time ago when it was on Cartoon Network, and even though I didn't know it, I was getting myself into anime.
As a side note, watching the AMV Hell series when you recognize all the anime's is pretty fun.

A lot of anime that some people have mentioned is very, very bad. Elfen Lied is so bad it makes me puke but If you enjoy it, more power to you, however it still doesn't make it good. I do not associate with any anime fans, mostly because I hate 99% of all of it and lets be honest, anime is mostly for kids and teenagers.
I will mention one because not only is there is a reference to it in Guild Wars, it is also very well made and I wish they're more like it. However, having adult themes in an anime is hard to come across.

Oh please, everyone has referenced Bleach or other popular animes that are for teenagers. If you wanted to have more adult themes, you will need to read manga or play visual novels. There is a reason why a lot of anime that comes from manga and visual novels have been watered down, It is because a lot of anime is targeted towards a younger audience. Cowboy bebop almost didn't appear on Japanese TV(TV Tokyo) because of the level of violence and even still, it only showed 5 episodes.
I haven't watched a lot of anime in a very long time. But, by what people have recommended, they're is no reason too either. It is funny, because a lot of anime fans can't deal with the idea that much content of what they're seeing is for kids and teenagers, but whatever.

Really? I always got the impression that they love being perpetual kids. I mean come on, they dress up like their favorite characters at conventions and play with figurines! Personally, I am a cartoon (in general) fanatic. Doesn't matter the intended age range, and gore/violence/sex/bad language doesn't make something immediately awesome, either. Though I do enjoy my fair share...

Dude, you can't say most of the mentioned anime is bad if you don't like it to begin with. Um, a lot of anime is not based around Naruto and Yugioh themes. Just because they're animated doesn't mean they're for kids. Elfen Lied is awesome.
Heck even DBZ was largely adult themed. Which I forgot to mention, DBZ is a must, even if it's loooong and incredibly drawn out. It's a staple and the later sagas are great.
And I forgot Inuyasha, one of my previous favorites until I found out there was no ending. >_< It was very upsetting. Still a good>

-Why does she have to use the girl's body to block the bullets when she wasn't finding bullets much of a problem after decapitating the last 20 mobs? Was she losing power or something?

Well, way to jump to conclusions so far. But okay, since it looks like most of the people have read the manga/watched the anime, it won't be much of a:
SPOILER SPOILER, mild one.
Her powers are called "Vectors". They are invisible, spectral hands that are indestructible, can go through humans and have impossible strength. But they can resist, depending on the power of the user, only a certain amount of Joules. So while deflecting normal bullets is easy, anti-tank sniper rifle gunshots are more than enough to break her concentration.
Her hands are only 2 meters long, but she makes up for that with a bigger strength than other of her kind. Why did she use the body as a shield? No idea, in the manga she used the girl as a hostage, backed off to the door, and then ripped her head off.
Oh, and she has to focus on using the hands. So if someone manages to wound her, the pain will break the focus and hands won't work.
Also, while it looks like that's some kind of experimental soldier, she was born this way. Every child that has those "hands" is the next step in human's evolution. But while it gains incredible powers, it also loses its gentle nature. By the age of 3.5, the child usually kills both of its parents and everyone who gets near. But they don't want to kill them, they want to control and rehabilitate those kids.
Why did she change to a stupid anime whiny idiot? That's a pretty huge spoiler, let's just say for now that she is suffering a trauma after the headshot.

Some of my favorites are Code Geass, Death Note, Neon Genesis Evangelion, Ghost in the Shell, Ergo Proxy, and Serial Experiments Lain. I also enjoyed Cowboy Bebop, Samurai Champloo and Fullmetal Alchemist. I'm in the process of watching .hack//SIGN, RahXephon, Trinity Blood, and Bakemonogatari. I also plan on watching Elfen Lied and Gundam 00 among other things.
Oh, also Lucky Star and the Melancholy of Haruhi Suzumiya.
I'm really sick of powerlevel shonen fighting anime bullshit like Bleach, Naruto and One Piece. Although I enjoyed Gurren Lagann mildly because it parodies all of those.

I watched the whole series of Black Lagoon and its pretty awesome. Aimed at adults due to its content but its recommended if you want loads of action.
Doesn't seem like there's anything special about this anime. It's pretty standard and I prefer others like Naruto, Bleach, FMP etc. Over this. But it's still enjoyable and worth watching.

Saying anime is mostly for kids and teenagers is highly redonkulous, the shojo and shonen markets (the ones most people people are convinced are kiddie ones, which is partly the way western companies portray them) make up only a share in an incredibly diverse market of genres, alot specifically targetted at adults.
I don't think hentai is for kids.

I can say its bad because I watched it. But since you didn't quote me correctly, I am going to think that you are a teenager or one of the people that I mentioned in my previous post. I could say many reasons why Elfen Lied is bad, I have said them already in a previous thread. But why is it good? I will say that the story s full of plot holes and is directed horribly.
DBZ is adult themed? Right and the target audience for DBZ is....... young TEEN's, good work! But since you are poised with stupidity, I am going to ask a question and I really want to know because I think some people just created it. What are Naruto and Yugioh themes?

I do agree with you that "gore/violence/sex/bad language doesn't make something immediately awesome". But lets be look at the target audience and whats associated with it by limiting what the characters and themes that are targeted towards kids and teenagers, it limits the options on what the characters and themes can and cannot do.
It doesn't necessarily make the anime bad or good, however anime fans try to spice up the idea of how anime isn't not for kids, children or teenagers. Yet, as you said they're anime fans that dress up and go to conventions but completely void the idea what they're doing is an theme associated with children.
Are there Anime that breaks away from it at time to time? Sure. But they're reasons why the majority of anime romances, drama and other genre's are with characters that are have the protagonist or main characters being portrayed as school kids.

I quoted whole thoughts and I didn't change your words. In answer, the themes I'm referring to are going to school, dealing with bullies, having a crush, making friends, impressing your teacher, taking a test.
I have no doubt that DBZ was targeted toward young teens, what themes exist in the show are different things, not completely, but they are different. If you watch unedited versions of the show, you'd find that there are more adult themes, it's sexual, violent, and there's a lot of death, although they fluff it out with the whole being wished back deal. This is not to say there are some teen themes involved, but it's largely more adult themed than Naruto, I'd say.
Just because kids are the main characters in the story, does not automatically make it directed at kids. Even some cartoons in the U.S. have children main characters in adult themed shows. Plus, Japanese culture is what it is, not saying this in any mean way, but different things are acceptable there than they are here and vice versa.
It's unfortunate that you can't get past this, there are really good stories that are told and are quite engaging. Ghost in the Shell has a quite unique premise and Neon Genesis (which I keep putting off watching) apparently gets real intricate if you can get through the main characters whining in the beginning.
Elfen Lied is awesome...the girl gets quartered! It has a good story to boot and they cover a lot of ground in just 13 episodes.
I have no comment on the con mentality, people will do what they do, I won't change that. People dress up and go to the Star Trek conventions, but no one will argue that that is directed at kids and teens exclusively.
Finally, Inuyasha's getting an ending eh? VERY interesting. That in itself makes my day.
